2 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup shortening
1/2 cup sugar
2 eggs
2 or 3 ripe bananas, cut up
2 tablespoons milk
1/2 cup chooped pecans or walnuts
In mixing bowl thorouglhly stir together the flour, baking powder, salt and baking soda. Set aside.
In a small bowl cream the shortening and sugar till light and fluffy. Add eggs and beat well.
Mash the bananas and stir in with the milk. Add the flour mixture and banana mixture alternately to creamed mixture. Beat with hand mixture after each addition until smooth. Fold in nuts. Pour batter into greased bread pans (2). Bake in 350 oven for 45 to 50 minutes or until tooth pick or knife inserted near center comes out clean. As soon as I take the bread out of the oven I wrap turn the loaves onto Reynalds Wrap and wrap them up. Eat hot or cold.
