Coconut Syrup
1 cup sugar
1/2 cup water
2 T. butter
1 t. coconut extract
Combine sugar, water and butter and bring to a boil; boil 5 minutes. Remove from heat and stir in flavoring. Serve over warm pancakes.
Pineapple Syrup
1 cup pineapple juice
1/2 cup sugar
Juice from 1/2 lemon
1 T cornstarch
1 T. butter, softened
Reserve 1/4 cup pineapple juice. In a heavy saucepan, bring rest of juices and sugar to a boil. Mix cornstarch into reserved 1/4 cup pineapple juice. Stir cornstarch mixture into hot juices. Stir sauce until thick and clear. Stir in butter. Pour over pancakes.
Brown Sugar Pancake Syrup
1 cup brown sugar
1/2 cup water
1 T. butter pinch of salt
Bring all ingredients to a boil. Once the sugar is dissolved, the syrup is ready to serve.
You can also store this and serve cold or at room temperature.
Maple Flavored Syrup
4 cups sugar
2 cups water
1/2 cup brown sugar
1 t. vanilla
1 t. maple extract
Combine sugar and water. Stir until dissolved. Bring to a boil. Cover, boil gently for 10 minutes. Remove from heat to cool slightly. Add vanilla and maple flavor. Stir only until mixed. Makes about 1 quart.
Apricot Syrup
Mix:
1 can Kerns nectar (or any flavor)
1 cup water
1/4 cup sugar
Put in saucepan, heat. Mix 1/3 c. water and 2 1/2 T. cornstarch. Stir cornstarch and water until dissolved. Pour into nectar mixture and bring to boil, stirring constantly, until it thickens.
Jell-o Pancake Syrup
1 small box Jell-o or other flavored gelatin
1 cup water
1/2 cup sugar
2 T. cornstarch
Mix the gelatin, sugar, cornstarch and water together in a small saucepan and bring to a rolling boil.
Pour into pitcher and let cool until syrup thickens slightly.
You might consider cutting the ingredients in half if you’re only serving a small group. This syrup doesn’t store well. It becomes too thick over time.
Apple Cider Syrup
2 cups apple juice or cider 1 cup sugar
2 T. cornstarch 1 T. lemon juice
cinnamon to taste nutmeg to taste
Cook and stir until thickened. Add 1 stick butter or margarine.
Any Flavor Syrup
1 cup sugar
1 T. butter
1/2 c. water
pinch of salt
Kool-Aid flavoring to taste
1 t. cornstarch (opt.)
Bring ingredients to a boil. Boil until sugar and flavoring are dissolved and serve warm. (You can also thicken this with 1 t. cornstarch.)
